If anyone's interested I just took some pre and post wash measurements. I have 3 other Iron Heart shirts that are all mediums but this one I ordered in large with intention of shrinking. I requested a shirt that was on the smaller side in the shoulders and arms.
The shirt was washed warm and tumbled dried hot.

Did the chest and shoulders stretch back out after wearing it? I found that to be the case.

I could use some fit check advice here. I'm torn… Do I go with L and hope it doesn't shrink too much, or go XL and hope it shrinks quite a bit?

I generally prefer a slimmer fit… I'm also packing a few extra pounds these days, which isn't terribly flattering.

The XL looks big as it is. The arms are certainly overly long and the body is getting there. It will shrink with a hot wash, but even then it may be borderline large.
The L looks better. While these will shrink on hot washes, careful washing results in minimal shrinkage (less than 3%). In fact if you wash at 30C/cold and with little or no spin, then air dry you won’t get any noticeable shrinkage.
I’m not too sympathetic to folks concerns about shrinkage on these shirts. It is a known quantity and entirely controllable. The only difficulty comes from people not understanding how a washing machine works.
Tl/dr. If I was you, I’d be very happy with the L.

Washing at 30deg on the delicate cycle will cause about 1cm of shrinkage in the sleeves and 2cm in the length. No shrinkage will occur horizontally (chest and waist).
Since the above shrinkage can tolerated with your large, I would recommend that size.
I don’t play the hot wash / dry shrinkage game. The vertical and horizontal dimensions shrink different amounts, so it’s not possible to proportionally shrink a shirt.
