In my 20’s, I would have eaten that “salad”.
I think I’ve posted this a while back, but seeing as I mentioned high calorie «salads», here you go:
This was dinner today. Chorizo, chick peas, preserved bell pepper and coriander. Served with a large dollop of creme fraiche. About 750 cals per serving (or two of the vanilla buns I made on Saturday
).

My wife is a native Texan. She told me years ago that it wasn't until she was in college that she learned it was possible to have a meal without meat.

So 14hrs later and the pork butt is done, a little longer than I was thinking but well worth it. Really glad the weather was somewhat decent in NY. This time of year it can be a crap shoot eaither way….
I'm really happy with how it turned out. I hadn't done pork butt in a while, it was a nice break from brisket and ribs.
