Thanks guys… I usually use cook books yes, have quite a collection. With japanese cooking I did several cooking classes.

A couple of eggs are beaten till they are frothy and poured into the pan before the meat mixture is added. Cooked in the oven for 45 mins then pour over another 3 beaten eggs, but this with the inclusion of chopped chillis and red onions..
Here it is being fried for breakfast, I think I got the idea from @jordanscollected ….

@Giles the Indian with egg variation is super intriguing. Shoot me the recipe so I can replicate please.
And seared meatloaf for breakfast is a great use of leftovers.

Thanks G. The cross section shows how delicious that must be. So egg is the only binder in this case it appears. That’s nice too because I would prefer to minimize bread.
Yes @jordanscollected is full of good ideas.
I griddle meatloaf not just for breakfast, but for service in general. A little extra visit from Mr Maillard can only help. Being an American, for breakfast I take the chance to throw a piece of sharp cheddar on top to get it melted a bit.
