I have a Moots Baxter which is more drop bar mountain bike as it can take 2.3 tyres. I am running mine with crossmax mountain bike wheels. Using a hybrid Di2 system with Grx levers paired with an XT mtb rear mech. Works nicely and can be configured via the Shimano software, I am running mine with upshifts on both left hand levers and downshifts on the right hand levers.

@Brock This rig is dialed! Ronnie Romance would approve. How do you find the Fabio's Chest? Bounce factor negligible with that front rack? I have always had my eye on one.

The Fabio’s chest is definitely the IH of the bike bag world. And with a rack for support is solid. However when fully loaded and riding on the rough stuff I do worry about my carbon fork!

The cavas that I’m running currently are great on pavement and gravel but a little squirrely on hard packed dirt and loamy surfaces

@Brock oh man, the tinkering never ends, which is part of the fun too! The super yummy's have been fantastic all around. So much so that I will getting a set for my more single track focused rig when the stock recons run their life cycle. And as you said, I just love what sim works does. Fun to support outfits like that!
